To prepare them, quickly beat two eggs to which you add salt, pepper, a spoonful of yogurt or milk, a little flour – optional, well-washed spinach leaves and a little cheese. Pour the resulting mixture into muffin tins and put them in the preheated oven. As soon as you’ve brushed your teeth or made the coffee, they’re ready! The classic omelette has just been dethroned!
